Turkish delight or lokum is a family of confections based on a gel of starch and sugar. Turkish delight (Lokum), which gave its name to our journal, is one of the geographical indication registered flavors of our Safranbolu District. Our traditional taste, which has reached the present day from the Ottoman Empire, has settled not only in our kitchens but also in our language thanks to its features. The expression 'like Turkish delight' is used for good works in Turkish. By choosing this name, we aimed to both introduce our cultural values and present good works.
